We have been importing our Colombian coffees from the Saldarriaga family since 2011, specifically from the Haciendas El Encanto and La Claudina. Their quality has impressed us then and continues to do so today. The collaboration also works exceptionally well across the individual projects (Finca Yuri, Michelangelo, La Virgen, Finca Iguake, etc.). Together, we have been able to continuously develop and improve the coffees. They have received numerous awards and have been a staple of our coffee selection for over a decade.

The picturesque haciendas (La Claudina and El Encanto) are located in Ciudad Bolivar, Antioquia, about 100 kilometers from Medellín. This region is one of the main coffee-growing areas in Colombia. It boasts perfect climatic conditions for cultivating premium coffees, which are predominantly processed using the washed method.

Together with Juan, new processing facilities and a new drying plant were built. The processing facilities allow for water savings and more efficient and faster washing and pulping. The new drying plant now makes it possible to dry coffees using a consistent "natural" fermentation process (where the coffee is dried in the cherry). Previously, drying took place in the sun, resulting in highly variable coffees depending on the weather. Now, the coffees can be dried at a constant temperature on multiple levels. This makes the coffees inherently sweet, accentuates the fruitiness, and yields an absolutely exceptional coffee.

Transformation of Hacienda El Encanto from 2012 to 2022

In recent years, we have also been able to initiate many ecological projects together with Juan, from which we benefit today. Since the early 2010s, we have been gradually developing Hacienda El Encanto into a biodiverse ecosystem in the form of permaculture, meaning our farms are not feeling the effects of climate change to the same extent as other farms. As a result, we have significantly fewer problems with landslides, crop failures, and extreme weather events, which can be mitigated by the presence of shade trees.

With Juan, who studied philosophy and political science in Heidelberg, we also have the advantage of his in-depth knowledge of the European coffee market. Many farmers are unaware of how their coffee is consumed in Europe. That's why communication between farmers, roasters, and customers is so crucial. This allows us to incorporate their feedback and influence the next harvest. The quality of the coffee, or rather the foundations for its characteristics, are laid at the source! Whether a coffee becomes fruity, floral, spicy, or earthy is determined by the farmer on-site through varieties, processing, shade trees, drying, and much more. This is why direct sourcing and contact with the farmers at the source are so important to us. Besides maximum transparency for our customers and fair prices for the farmers and pickers, the advantage for us as a roastery is that we consistently have excellent coffees in stock and can work with the farmers to refine their flavor profiles.

Beyond the quality of the coffee and its ecological sustainability, we are committed to social sustainability on the ground together with Juan.
