Flavor profile
Guatemala CODECH organic green coffee develops a complex and balanced aroma after roasting, which you can refine individually through your roasting profile:
- Citrus fruit – lively, tangy acidity, reminiscent of lemon or orange
- Dark chocolate – velvety depth with an elegant bitter note
- Nutty – subtle notes of hazelnut, almond or walnut
- Wild honey – a gentle floral sweetness, harmoniously integrated
- Banana – subtle fruit sweetness with a creamy character
These aromas create a harmonious overall impression of freshness, depth, and sweetness, which develops individually depending on the roast level. The velvety, light body and clean cup profile make this green coffee a versatile companion for all roasting styles – from filter to espresso.
Origin & Cultivation
This coffee comes from the CODECH cooperative in Concepción Huista, Huehuetenango, in western Guatemala. The region is characterized by:
- Volcanic soil – rich in minerals
- Altitudes between 1,400–1,900 m – ideal conditions for complex Arabica coffees
- Small-scale farming by small farmers
Organic cultivation takes place under ideal climatic conditions. The coffee varieties grow in the shade of native trees, which promotes slow ripening processes and increases the intensity of aromas.
Sustainability & Quality
The CODECH cooperative consistently focuses on:
- Organically certified cultivation without synthetic chemicals
- Training in sustainable agricultural practices
- Protection of biodiversity and soil fertility
- Fair trade – with stable purchase prices for farmers
This ensures that the coffee is produced in an environmentally friendly, socially just manner and with the utmost care.
Harvest & Processing
The harvest is done by hand; only ripe cherries are selected. Afterwards, the beans are:
- Washed (fully washed)
- Sorted and sun-dried
Wet processing gives the coffee its clear structure and fine acidity, while preserving the fruity and chocolatey notes.
Philosophy & Commitment
CODECH stands for sustainable development in the Huehuetenango region. The cooperative:
- Supports social projects (e.g., education and health)
- Creates long-term prospects for family businesses
- Combines high-quality coffee production with environmental and social responsibility
By purchasing this coffee, you are supporting a cooperative that thinks holistically – from the plant to the community.
