Our new decaffeinated coffee from Mexico is gently decaffeinated without chemical solvents – using Descamex's Mountain Water process. First, the beans are steamed to extract the aromatic compounds and caffeine. The water is then filtered, retaining only the aromas. Subsequent batches of coffee are treated with this aromatic water, and through osmosis, up to 50% of the caffeine is removed in each round, until the caffeine content is reduced to 0.01–0.02%.

Origin & Cultivation
This coffee comes from the Chiapas region in southern Mexico, an area known for its fertile soils, tropical forests, and ideal microclimate for high-quality Arabica coffee. At altitudes of around 1,000 meters, the coffee trees are predominantly cultivated on small farms. The farmers rely on traditional methods: the cherries are carefully harvested by hand, then washed (washed processing) and dried in the sun on patios.

For optimal results, we recommend a medium grind for filter brewing methods and a finer grind for espresso. The ideal water temperature is around 92–94 °C. This preserves the coffee's delicate notes and pleasant balance.
