Flavor profile
This naturally processed organic forest coffee from Ethiopia unfolds a particularly complex and spicy aroma, which is intensified by sun-assisted drying.

Experience it in a cup:

  • Full-bodied with a rounded structure
  • Spicy notes combined with a delicate sweetness
  • Complex aroma thanks to gentle natural drying
  • Ideally suited for filter methods, French press and creative roasting profiles – for roasters who appreciate complexity.

Origin & Cultivation
This rare raw coffee comes from the rainforest mountains of Anfilo (Wällägga) in western Ethiopia, where it has been cultivated wild for over 500 years in its original genetic diversity.

The Cueillette cooperative, with around 100 small farmers, cultivates plots of land between 2 and 10 hectares and focuses on high-quality specialty coffee.

  • Country: Ethiopia
  • Region: Anfilo, Wällägga
  • Altitude: 2,200 m
  • Cooperative: Cueillette
  • Varieties: Dawo, Tobi, Anfiloo (old Typica selections)
  • Processing: natural (sun-dried)
  • Harvest yield: approx. 3,600 kg annually

Sustainability & Quality
The coffee plants grow wild and biodiverse in the natural shade of the forest. They are fertilized organically, not artificially – pesticides are not used.

Natural drying on African dry beds enhances the sweetness and creates a full-bodied mouthfeel. This natural processing method gives the coffee depth and character.

Certifications (where applicable): Organic, Bird Friendly

processing
The sun-dried "natural" processing method preserves the original character of the coffee and enhances its complexity. The coffee cherries are harvested by hand when fully ripe, then dried in the sun – a process that requires a great deal of patience and skill.
