All coffees at Mondo del Caffè are refined using the drum roasting method . But what does that actually mean?

Drum roasting is all about extracting the very best from the coffee bean. It's a traditional roasting method that results in highly aromatic coffees and espressos. At Mondo del Caffè, a roasting process takes approximately 18–20 minutes. We roast in small batches (12–60 kg) at a maximum temperature of 215 °C. This allows the aroma to develop perfectly, while acids and bitter compounds are reduced.

Our master roasters decide, from coffee to coffee, from roast to roast, when the perfect point has been reached and the coffee or espresso has fully developed. This requires a discerning nose, experience, and a great deal of intuition. In industrial processes, the roasting process only takes about 90 seconds to 3 minutes – fully automated, of course. This is naturally cheaper and less labor-intensive, but the coffee has less time to develop, and the acids and tannins it contains remain locked in.

Prices that are significantly higher than the world market level (approximately two to three times higher) demand the very best quality raw coffee and adherence to our social standards by the producers and farmers. These include, among other things: no child labor, payment of fair wages for harvest workers and pickers, no exploitation, and much more.
